The smallest Rhum Agricole distillery in Martinique is located at the foot of the Montagne Pelée, on volcanic, fertile soil. Rhum J.M is the only Martinican rum producer who grows 100 percent of its own sugar cane. Due to the humid and at the same time growth-promoting microclimate of the small Antilles island, it has a high sugar content. Just one hour after harvesting, the plant is pressed to make Rhum Agricole from its juice.
Karine Lassalle supervises the production. Since 2017, the specialist has been responsible for the maturing Rhum Agricole as a quality manager and cellar master at Rhum J.M – and the development of new products. Such as the series “L’Atelier des Rhums”. The rums with extraordinary aroma profiles are the result of Lassalle’s talent for barrels as well as her willingness to experiment with sugar cane juices, heating techniques, types of wood and barrel volumes.
