The Highland Park distillery in Kirkwall on the Orkney Islands, founded in 1798, is the northernmost distillery in Scotland. Due to its special location, especially the peat on Orkney, which differs significantly from the Islay peat, the whisky has a special taste. One of its basic aromas is the much-quoted “heather sweetness”. The water comes from a lower spring, the Cattie Maggie’s Quarry.
