Whiskey from the United States of America is divided into the main categories of bourbon and rye. Bourbon takes its name from a county in Kentucky, today’s County Bourbon, named after the French noble family. All producers in the US are allowed to call their grain distillate “Bourbon”. The addition “Kentucky Bourbon” defines the origin. If it is a “Kentucky Straight Bourbon”, this designation indicates that the mash used consists of at least 51% corn. Storage in barrels made of fresh American oak, which have to be charred beforehand, is stipulated by law. The storage time is usually at least 4 years. The mash for the straight rye whiskey must consist of at least 51% rye, which gives this whiskey a pronounced dry bitterness.
