As a classic “working distillery”, the Birkenhof does all the work itself. Grain or fruit delivered to the farm is carefully checked and mashed on site. It is macerated, percolated and distilled. In the large 1,400-litre distillery, the next generation of Fading Hill whiskies is created, while in the fruit distillery a new noble brandy is made from Wahl’s brandy pears. In the grain distillery, the aroma is of classic, traditional grain brandies.
