This triple distilled single malt is matured in American oak bourbon casks and European oak Oloroso sherry casks. The whiskey is made from a mash that consists exclusively of Irish barley. It then matures in both bourbon and oloroso sherry casks.

Tasting Notes

Nose: Ripe and fruity. Peach, dried apricot and tropical fruits. Orange Blossom and Vanilla.
Palate: Vanilla sweetness, granola, toasted almonds and honey, some oak, biscuit, apricots and a hint of cocoa.
Finish: Long-lasting finish. Light maltiness and sweet oak.

Construction of the Walsh Distillery in Royal Oak, County Carlow began in September 2014 and was completed in 2015. Since 2016, Irish whiskey has been produced in the distillery using both the pot still and patent still processes (column stills). As a result, pot, malt, grain and blended whiskeys are offered.
