The fermentation is carried out by regional wild yeasts, which contribute significantly to the special taste of the rum. It is distilled in the Jamaican Hampden Estate Distillery, which is known for its aromatic distillates. For Smith & Cross only pot still distillates are used. The intense rum is blended from almost equal parts of Wedderburn rums that have been matured for at least six months and Plummer rums that have been matured for between 18 months and 3 years. Smell: Exotic, sweet, subtle hint of wood.
Flavour: Pleasant sweetness, extremely soft despite the high alcohol content. The typical “Jamaica” aromas remain for quite a long time.
