At Daftmill Farm, everything actually revolves around the cultivation of malting barley, the rearing of beef cattle, potatoes, carrots and broccoli. Since 2018, however, the farm of the Cuthbert family from Fife in the Scottish Lowlands has been firmly on the whisky world map: after more than 12 years of waiting, Daftmill then brought its first single malt onto the market. The Cuthberts produce their Scotch in very small quantities, sometimes no more than 100 barrels a year, exclusively from their own barley. Distilling takes place in the low season (June and July as well as in winter) when neither potatoes have to be planted nor barley sown.

In 2022, the Cuthbert family bottled their oldest and first single malt with an age statement to date – and are now replenishing the supply with the Daftmill 15 y.o. The Optic barley for the Lowland whisky comes from the farm’s southern fields. Distilled in the two copper stills, 20 first-fill bourbon barrels and a Pedro Ximénez-lined sherry cask were then combined to create Daftmill’s new eldest. It was bottled at Fife Strength, a traditional strength for the region of 56.3% vol.
