Dornoch Distillery was founded in 2016 by brothers Phil and Simon Thompson. The distillery focuses on producing single malt whisky using a blend of traditional and modern methods, including sourcing traditional barley varieties, fermenting with local ale yeasts and utilising natural seasonal variations to produce intensely flavoured spirits.
With maturation, bottling, dilution and filtration all done in-house, the team can focus on each individual bottling – both those distilled at Dornoch Distillery and independent bottlings – ensuring that the unique character of the spirit is preserved as much as possible, bottling with natural colour and without chill filtration.
