Nc’nean is Annabel Thomas’ dream come true of a modern, sustainable whisky distillery in Scotland. The distillation on the coast of the Morvern peninsula has been running since 2017.
The whisky is made from organically grown Scottish barley in a distillery that is 100 percent renewable energy. It is bottled in the UK’s first fully recycled clear glass bottle. “Made by nature, not by rules” is the motto of one of the few women-run whisky distilleries in the world.

The Nc’nean Quiet Rebels series is dedicated to the people who make Scotland’s leading organic distillery what it is. These environmentally conscious connoisseurs share a passion for innovative and sustainable spirits. Each of them is personally behind a whisky in the series, expressing their individual preferences through barrel experiments or yeast trials.
For example: fruity, jammy notes with a hint of roasted spices. This is how Amy, Nc’nean’s Head of Sustainability, prefers her whisky. Ecological principles are an integral part of her philosophy. Therefore, in addition to the typical STR red wine and bourbon casks, her Nc’nean Quiet Rebels – Amy also contains whisky matured in rare, organic Maury-filled casks. This fortified wine from France is produced in a similar way to port wine.
Not only does this single malt taste delicious, it’s also a perfect example of how there are more sustainable ways to produce the things we enjoy. Like lemon curd, plum jam, and brown butter muffins in a carbon-neutral single malt from the wild west coast of the Highlands.
