Eden Mill is the first producer in Scotland to combine a craft brewery and distillery. They have been producing craft beer again in St Andrews since 2012 and gin and whisky since 2014, after the Haig family last produced whisky here in 1860. Just under 150 years earlier, they were still producing grain whisky with the then Seggie Distillery.
The symbiosis of brewery and distillery produces aromatic beers with a strong character, which in their unhopped state form the basis for their whiskies. A considerable amount of aromas are brought into the later whisky by the Pale, Chocolate and Crystal Malt varieties, thus creating unique products. There is still a lot of experimentation and questioning going on here and thus the product range and quality are constantly being brought forward. Everything is produced by hand and harvested from local fields.
Eden Mill’s gin also benefits excellently from this symbiosis. The usual addition of botanicals to the neutral alcohol used in gin enjoys not only juniper but also unusual ingredients such as hops or coarse matured pieces of oak. The range of gins reinvents the category and reflects the courage to innovate here too. Currently, in addition to a more classic gin (Original Gin), Eden Mill also produces three other gins: the Love, Oak and Hop Gins.
All gins are small-batch approaches and of high quality, yet Eden Mill Distillery is able to offer its gins at excellent prices.
