Speyside
The Speyside region as part of the Highlands is the "heart of Scottish whisky production". Named after the river of the same name, the River Spey, which is also one of the most famous salmon rivers in the world, Speyside has the highest concentration of malt whisky distilleries. There are more than 30 distilleries within a radius of about 20 kilometers. In the center of this region lies the small town of Dufftown with around 3,000 inhabitants, which is also known as the secret "whisky capital of the world". However, the sentence "Rome was built on seven hills - Dufftown stands on seven stills" was only valid until the eighth distillery was built in Dufftown.

The distillery is located north of Port Askaig on the island of Islay, directly on the Sound of Islay. It was built in 1846 and has had a completely new stillhouse since 1974, expanded to six stills. The distillery, from which one has a wonderful view of the island of Jura, is now owned by Diageo. Caol Ila is a good example of a "working horse" that produces mainly for blends, in this case for Johnnie Walker.

The Balvenie 12 Years Home Malted is a tribute to the oldest bottling the distillery has ever released, created by Malt Master Kelsey McKechnie. The whisky first matured in American oak and was then finished in former European oak sherry casks. The barley used comes entirely from the distillery's own maltings, one of the few in Scotland that still malts its own barley. The result is a harmonious, elegant interpretation of the classic Balvenie style, with warm biscuit aromas and honey-sweet toffee on the nose, candied ginger and raisins on the palate and a full-bodied, velvety-smooth finish.

The Balvenie 14 Year Old Week of Peat contains whisky that is only produced for one week a year. When the distillery is closed for cleaning and maintenance, heavily peated barley malt is distilled beforehand. The first and second run is stored in additional tanks and reused the following year, so each vintage is linked together. The peat content in the malt is around 30 ppm.
