The apple brandy from Normandy is produced by double pot still distillation of cider, i.e. fermented apple must. At Drouin, the origin-protected speciality matures intensively in a selection of mostly smaller oak barrels. The house also experiments with finishes.

With Nork Derbe (“a lot” in North German) the team goes a step further. The sophisticated mix of wheat, rye and peated barley malt results in a complexity unknown to Korn, which is more reminiscent of unmatured whisky, grappa or mezcal: grain notes from fruity to earthy as well as aromas of peat smoke and freshly baked bread – a rough taste.
