Isle of Raasay 2021 Oloroso Sherry #21/142 - 59.6%

Product information "Isle of Raasay 2021 Oloroso Sherry #21/142 - 59.6%"

In May 2017, Bill Dobbie and Alasdair Day brought barley cultivation back to Raasay after more than 40 years. Since then, the old Icelandic barley varieties Bere and Iskria, among others, have been thriving here. But that wasn’t enough to serve as the basis for the distillery’s inaugural malt. Malt made from Scottish barley, still kilned over Highland peat (plans are already in place to use local peat for future bottlings), forms the foundation for the Isle of Raasay Single Malt Inaugural Release 2020. Slightly smoky, with rich aromas of dark fruits and a natural, deep reddish-brown color, this Scotch offers a sensuous introduction to the Raasay Distillery’s style—and builds anticipation for the Core Range, expected in May 2021.

Other distinctive features of this whiskey include the Raasay water, filtered through volcanic sedimentary rock, and the unusually long fermentation period of 96 to 110 hours. This process preserves the water’s high mineral content, ensuring the characteristic berry-like flavor even before the whisky comes into contact with the cask.

Safe Haven 2014 Murray McDavid Koval Rye Cask - 51,1%, Single Malt from Islands, Scotland
Safe Haven 2014 Murray McDavid Koval Rye Cask - 51,1%

Behind this whisky lies the expertise of the independent bottler Murray McDavid, known for its creative cask selection. Distilled in 2014, this single malt spent its nine years of maturation partly in small Koval rye quarter casks. These special casks from a renowned Chicago distillery give the robust spirit an additional layer of spice and structure, which ideally complements the maritime heritage of the spirit and provides remarkable depth. The nose reveals a dense cloud of peat, underpinned by creamy malt and a delicate sweetness. On the palate, at a powerful 51.1% ABV, the whisky unfolds a complex profile of grilled apricots and smoky BBQ aromas, accompanied by vanilla and a surprising tropical fruitiness. The finish is long and oily, recalling a dying campfire on the beach, while the natural golden colour in the glass underlines the purity of the spirit. Tasting Notes Nose: Pronounced smoke and earthy peat meet juicy apple notes and the soft elegance of creamy malt.Palate: A combination of grilled apricot and tropical fruit notes unfolds on the palate, accompanied by fine vanilla and a spicy depth.
