In 2005, Anthony Wills opened Kilchoman, the first new whiskey distillery on Islay in 124 years. It is located in the northwest of the island on a former farmstead, Rockside Farm. Its whisky is the only one that can call itself “100% Islay,” as all ingredients and production steps are carried out on-site. It is the only Islay distillery not located directly on the coast.

This Kilchoman was bottled to mark the distillery's 20th anniversary. The Kilchoman 15 Year Old was aged in former sherry casks.
Tasting Notes
Nose: The bouquet opens with notes of pepper, rich sherry sweetness, and salty hints.
Taste: A peppery heat spreads across the palate, accompanied by sherry-soaked dark fruits and gentle wisp of smoke.

Like the classic Sanaig, the exclusive Kilchoman Sanaig matured mainly in Oloroso sherry casks, but was bottled at natural cask strength of 57.5 % Vol. Instead of adding water, this Sanaig was created at natural cask strength. This Kilchoman 2010 was bottled to celebrate the 50th anniversary of the Hanseatic Wine Trading Company. The whisky matured for over 13 years in a fresh bourbon cask and was bottled at a cask strength of 53.8%. The cask yielded a total of 235 bottles. On the palate, this whisky exhibits intense peat notes, toffee, smoke, and a pleasant spice.
