The core range of The GlenAllachie consists of single malts aged at least eight years. Their hallmark: they mature mainly in first-class sherry casks. An outstanding example is The GlenAllachie 21 y.o.
With more than half a century of expertise, Master Blender Billy Walker married hand-picked Pedro Ximénez and Oloroso sherry puncheons and hogsheads for the cask strength Batch 6. The result? A rich, luxurious single malt that glazes the palate with layered notes of syrup, maraschino cherries, dark chocolate and candied ginger.
Tasting Notes:
Nose: Ripe dark cherries and brandy-soaked honeycomb, with notes of spiced orange, thick syrup and blackberry tart.
Palate: Dark chocolate, dried red berries and maraschino cherries, followed by heather honey and candied ginger.
Finish: Plum brandy and mocha.

The distillery: back in Scottish private ownership since 2017
Founded in 1967, The GlenAllachie Distillery was owned by foreign corporations for a long time. In 2017, The GlenAllachie Distillers Company bought the Speyside distillery, together with the filled casks in the warehouse. Its new owners: long-standing Scottish whisky luminary Billy Walker and his partners Trisha Savage and Graham Stevenson. The new team was introduced to the distillery's particular features by long-serving staff. Among them: the distillery has four stills and two separate spirit safes, so it can produce two different spirits in parallel, for example peated and unpeated new make.
Until then, The GlenAllachie Distillery had produced almost exclusively for blended whiskies. Single malt, on the other hand, was extremely rare, available for example through independent bottlers. This changed in 2017 with the takeover by Billy Walker's team. Age statements for its single malts are important to The GlenAllachie: the core range consists of a 10, 12, 18 and 25-year-old whisky. In addition, regular single cask and special releases are planned, and from 2018 even a peated whisky.

4cl sample of the Highland Park 1999 Best Dram #5537 - 55,7% Refill Oloroso Sherry Butt Founded in 1798, the Highland Park distillery in Kirkwall on the Orkney Islands is Scotland's northernmost distillery. Thanks to its special location, and in particular Orkney peat, which differs considerably from Islay peat, the whisky has a distinctive flavour. One of its core aromas is the much-quoted “heather honey sweetness”. The water comes from a lower-lying spring, Cattie Maggie's Quarry.

It is bottled in the UK's first fully recycled clear glass bottle. Fittingly, "Made by nature, not by rules" is the motto of one of the few female-led whisky distilleries in the world.

4cl sample of the Mortlach 2007 Kirsch Dragon - 56,6% First Fill Bolgheri #102 Mortlach is the oldest distillery in Dufftown, the centre of Speyside. It was founded in 1823 on the banks of the Dullon, but draws its water from the Conval Hills. Its whisky is distilled in a special process using six stills, one of which bears the lovely name "wee witchy", little witch.

It is located in Minmore near Ballindalloch in Speyside. The current distillery site has existed since 1858, and in 1880 the distillery won the right in court to put “The” in front of its name. Today it is owned by Pernod Ricard.

At the foot of Scotland's highest mountain, Ben Nevis in the western Highlands near Fort William, lies the distillery of the same name. It was built in 1825 by John McDonald, a descendant of the Lord of the Isles. Production was halted between 1984 and 1990; after the takeover by Nikka in 1989, production resumed a year later. The water for Ben Nevis comes from the Allt A Mhullin Burn.

The Octomore distillery was founded in 1816 by George Montgomery in Port Charlotte on the island of Islay. In 1852, Thomas Pattison took over the distillery, which was closed later that same year. In 2008, Bruichladdich had plans to reopen Octomore, but these plans were never realized. However, since 2008, Bruichladdich has been bottling a heavily peated single malt under the name “Octomore.”

The Bruichladdich distillery on Islay, whose name means “corner of the beach,” was built in 1881 by the Harley brothers. After the distillery had been closed for some time, it was announced on December 20, 2000, that it would soon resume operations. As early as May 2001, the first newmake flowed from the stills. Bruichladdich's success is closely linked to the work of one of the most influential figures in the Scottish whiskey scene—Jim McEwan. In 2012, the distillery changed hands again for 58 million pounds. The current owner is Remy Cointreau.
