Nc'nean is Annabel Thomas's dream come true of a modern, sustainable whisky distillery in Scotland. Distillation has been running on the coast of the Morvern peninsula since 2017.
The whisky is made from organically grown Scottish barley in a distillery powered 100 per cent by renewable energy. It is bottled in the UK's first fully recycled clear glass bottle. Fittingly, "Made by nature, not by rules" is the motto of one of the few female-led whisky distilleries in the world.

At the remote Nc'nean distillery, located on the wild coast of Morvern, this special whisky was created under strictly ecological principles. Distilled in August 2017 from organically grown barley, the single malt matured for over eight years in a single Oloroso sherry butt. This exclusive bottling for the 50th anniversary of Kirsch Import underlines the distillery's sustainable ethos, which combines traditional craftsmanship and a modern connection with nature in a striking dark glass bottle.
At a powerful cask strength of 59.4% ABV, the whisky presents a deep amber hue, achieved entirely without added colouring. On the nose, opulent notes of rich Christmas cake and dried Medjool dates unfold at once, accompanied by a fine, ethereal spice. The palate shows a rich, almost creamy texture, where the dark sweetness of the sherry combines with notes of candied orange and a hint of cocoa to create a complex, intense experience.

4cl sample of the Highland Park 1999 Best Dram #5537 - 55,7% Refill Oloroso Sherry Butt Founded in 1798, the Highland Park distillery in Kirkwall on the Orkney Islands is Scotland's northernmost distillery. Thanks to its special location, and in particular Orkney peat, which differs considerably from Islay peat, the whisky has a distinctive flavour. One of its core aromas is the much-quoted “heather honey sweetness”. The water comes from a lower-lying spring, Cattie Maggie's Quarry.

4cl sample of the Mortlach 2007 Kirsch Dragon - 56,6% First Fill Bolgheri #102 Mortlach is the oldest distillery in Dufftown, the centre of Speyside. It was founded in 1823 on the banks of the Dullon, but draws its water from the Conval Hills. Its whisky is distilled in a special process using six stills, one of which bears the lovely name "wee witchy", little witch.

It is located in Minmore near Ballindalloch in Speyside. The current distillery site has existed since 1858, and in 1880 the distillery won the right in court to put “The” in front of its name. Today it is owned by Pernod Ricard.

At the foot of Scotland's highest mountain, Ben Nevis in the western Highlands near Fort William, lies the distillery of the same name. It was built in 1825 by John McDonald, a descendant of the Lord of the Isles. Production was halted between 1984 and 1990; after the takeover by Nikka in 1989, production resumed a year later. The water for Ben Nevis comes from the Allt A Mhullin Burn.

Full maturation in first fill bourbon barrels brings out vanilla milkshake, Scottish confectionery notes and warm vanilla custard together with pear drops and malt syrup. Dry, earthy smoke, smouldering oak and ash build up in waves. The salty note cuts through the sweetness and brings clarity. The Octomore distillery was founded in 1816 by George Montgomery in Port Charlotte on the island of Islay. In 1852, Thomas Pattison took over the distillery, which was closed later that same year. In 2008, Bruichladdich had plans to reopen Octomore, but these plans were never realized. However, since 2008, Bruichladdich has been bottling a heavily peated single malt under the name “Octomore.”

Deeply charred peat settles over the palate as dry, ashy smoke, while citrus oils and salinity bring clarity. The Bruichladdich distillery on Islay, whose name means “corner of the beach,” was built in 1881 by the Harley brothers. After the distillery had been closed for some time, it was announced on December 20, 2000, that it would soon resume operations. As early as May 2001, the first newmake flowed from the stills. Bruichladdich's success is closely linked to the work of one of the most influential figures in the Scottish whiskey scene—Jim McEwan. In 2012, the distillery changed hands again for 58 million pounds. The current owner is Remy Cointreau.
