Glenlivet was the first legal distillery, founded by George Smith with an official government licence following the “Excise Act” of 1824. It is located in Minmore near Ballindalloch in Speyside. The current distillery site has existed since 1858, and in 1880 the distillery won the right in court to put “The” in front of its name. Today it is owned by Pernod Ricard.

Distilled on 30 May 2006 at the historic Glenlivet Distillery, this single malt spent a full 20 years in a 1st fill Oloroso sherry hogshead. For this single cask, number 900624, the independent bottler Signatory Vintage chose the striking Ibisco decanter, which impressively showcases the whisky's deep, natural amber colour. At a remarkable cask strength of 63.5% ABV, the edition was bottled unfiltered in July 2026 in a limited run of just 289 bottles.
The nose reveals an intense interplay of raisins, dates and creamy honey, underpinned by a fine caramel sweetness. On the palate, the whisky is full-bodied and powerful, with notes of dark chocolate meeting ripe stewed plums and the distinctive spice of oak. The finish lingers for a long time and fades with nuances of dry cocoa and walnuts, creating a harmonious balance with the fruity depth.

4cl sample of the Highland Park 1999 Best Dram #5537 - 55,7% Refill Oloroso Sherry Butt Founded in 1798, the Highland Park distillery in Kirkwall on the Orkney Islands is Scotland's northernmost distillery. Thanks to its special location, and in particular Orkney peat, which differs considerably from Islay peat, the whisky has a distinctive flavour. One of its core aromas is the much-quoted “heather honey sweetness”. The water comes from a lower-lying spring, Cattie Maggie's Quarry.

It was founded in 1823 on the banks of the Dullon, but draws its water from the Conval Hills. Its whisky is distilled in a special process using six stills, one of which bears the lovely name "wee witchy", little witch.

At the foot of Scotland's highest mountain, Ben Nevis in the western Highlands near Fort William, lies the distillery of the same name. It was built in 1825 by John McDonald, a descendant of the Lord of the Isles. Production was halted between 1984 and 1990; after the takeover by Nikka in 1989, production resumed a year later. The water for Ben Nevis comes from the Allt A Mhullin Burn.

The Octomore distillery was founded in 1816 by George Montgomery in Port Charlotte on the island of Islay. In 1852, Thomas Pattison took over the distillery, which was closed later that same year. In 2008, Bruichladdich had plans to reopen Octomore, but these plans were never realized. However, since 2008, Bruichladdich has been bottling a heavily peated single malt under the name “Octomore.”

The Bruichladdich distillery on Islay, whose name means “corner of the beach,” was built in 1881 by the Harley brothers. After the distillery had been closed for some time, it was announced on December 20, 2000, that it would soon resume operations. As early as May 2001, the first newmake flowed from the stills. Bruichladdich's success is closely linked to the work of one of the most influential figures in the Scottish whiskey scene—Jim McEwan. In 2012, the distillery changed hands again for 58 million pounds. The current owner is Remy Cointreau.
