Founded in 1798, the Highland Park distillery in Kirkwall on the Orkney Islands is Scotland's northernmost distillery. Thanks to its special location, and in particular Orkney peat, which differs considerably from Islay peat, the whisky has a distinctive flavour. One of its core aromas is the much-quoted “heather honey sweetness”. The water comes from a lower-lying spring, Cattie Maggie's Quarry.

Refill Oloroso Sherry Butt
Distilled on 30 September 1999 at the legendary distillery on Orkney, this single malt spent a full 26 years in a refill Oloroso sherry butt. The independent bottler Best Dram specifically selected cask number 5337 to combine the distillery's maritime DNA with the fine spice of sherry. Bottled on 17 July 2026, this single cask is limited to just 498 bottles and represents craftsmanship in its purest form.
The eye is delighted by a warm amber hue that harmonises perfectly with the atmospheric sunset label. The nose unfolds a complex bouquet of heather honey, dried apricots and fine orange zest, subtly underpinned by a hint of earthy smoke. On the palate, the whisky presents itself at a powerful 55.7% ABV and reveals layers of caramelised nuts and spicy sherry notes before fading into a long finish of oak and roasted hazelnuts.

Distillation has been running on the coast of the Morvern peninsula since 2017. The whisky is made from organically grown Scottish barley in a distillery powered 100 per cent by renewable energy. It is bottled in the UK's first fully recycled clear glass bottle. Fittingly, "Made by nature, not by rules" is the motto of one of the few female-led whisky distilleries in the world.

4cl sample of the Mortlach 2007 Kirsch Dragon - 56,6% First Fill Bolgheri #102 Mortlach is the oldest distillery in Dufftown, the centre of Speyside. It was founded in 1823 on the banks of the Dullon, but draws its water from the Conval Hills. Its whisky is distilled in a special process using six stills, one of which bears the lovely name "wee witchy", little witch.

At the foot of Scotland's highest mountain, Ben Nevis in the western Highlands near Fort William, lies the distillery of the same name. It was built in 1825 by John McDonald, a descendant of the Lord of the Isles. Production was halted between 1984 and 1990; after the takeover by Nikka in 1989, production resumed a year later. The water for Ben Nevis comes from the Allt A Mhullin Burn.

The Octomore distillery was founded in 1816 by George Montgomery in Port Charlotte on the island of Islay. In 1852, Thomas Pattison took over the distillery, which was closed later that same year. In 2008, Bruichladdich had plans to reopen Octomore, but these plans were never realized. However, since 2008, Bruichladdich has been bottling a heavily peated single malt under the name “Octomore.”

The Bruichladdich distillery on Islay, whose name means “corner of the beach,” was built in 1881 by the Harley brothers. After the distillery had been closed for some time, it was announced on December 20, 2000, that it would soon resume operations. As early as May 2001, the first newmake flowed from the stills. Bruichladdich's success is closely linked to the work of one of the most influential figures in the Scottish whiskey scene—Jim McEwan. In 2012, the distillery changed hands again for 58 million pounds. The current owner is Remy Cointreau.
