At the foot of Scotland's highest mountain, Ben Nevis in the western Highlands near Fort William, lies the distillery of the same name. It was built in 1825 by John McDonald, a descendant of the Lord of the Isles. Production was halted between 1984 and 1990; after the takeover by Nikka in 1989, production resumed a year later. The water for Ben Nevis comes from the Allt A Mhullin Burn.

Distilled in the shadow of Scotland's highest mountain, this single malt matured for nine years from 2017. It owes its particular complexity to the finish in 1st fill orange wine cask number 6, a rare choice that gives the robust Ben Nevis style a whole new dimension. Bottled by the renowned independent bottler Signatory Vintage for the exclusive “Dragon” series, the whisky was left untouched at its natural cask strength of 59.0% ABV, is non-chill-filtered and comes in its natural amber colour.
The nose unfolds a lively bouquet of ripe apples and pears, quickly complemented by distinctive orange peel and dried citrus fruit. The palate shows the typical power of the Highlands: a sweet, malty base with caramel meets spicy accents of ginger, cinnamon and pepper, while the winey note of the cask provides a harmonious structure. The finish is long and dry, marked by dark fruit, cocoa and a fine presence of oak.

4cl sample of the Highland Park 1999 Best Dram #5537 - 55,7% Refill Oloroso Sherry Butt Founded in 1798, the Highland Park distillery in Kirkwall on the Orkney Islands is Scotland's northernmost distillery. Thanks to its special location, and in particular Orkney peat, which differs considerably from Islay peat, the whisky has a distinctive flavour. One of its core aromas is the much-quoted “heather honey sweetness”. The water comes from a lower-lying spring, Cattie Maggie's Quarry.

4cl sample of the Mortlach 2007 Kirsch Dragon - 56,6% First Fill Bolgheri #102 Mortlach is the oldest distillery in Dufftown, the centre of Speyside. It was founded in 1823 on the banks of the Dullon, but draws its water from the Conval Hills. Its whisky is distilled in a special process using six stills, one of which bears the lovely name "wee witchy", little witch.

The Octomore distillery was founded in 1816 by George Montgomery in Port Charlotte on the island of Islay. In 1852, Thomas Pattison took over the distillery, which was closed later that same year. In 2008, Bruichladdich had plans to reopen Octomore, but these plans were never realized. However, since 2008, Bruichladdich has been bottling a heavily peated single malt under the name “Octomore.”

The Bruichladdich distillery on Islay, whose name means “corner of the beach,” was built in 1881 by the Harley brothers. After the distillery had been closed for some time, it was announced on December 20, 2000, that it would soon resume operations. As early as May 2001, the first newmake flowed from the stills. Bruichladdich's success is closely linked to the work of one of the most influential figures in the Scottish whiskey scene—Jim McEwan. In 2012, the distillery changed hands again for 58 million pounds. The current owner is Remy Cointreau.
