Highland Park
Founded in 1798, the Highland Park distillery in Kirkwall on the Orkney Islands is the northernmost distillery in Scotland. Thanks to its special location, and in particular the Orkney peat, which differs considerably from Islay peat, the whisky has a distinctive flavour. One of its basic aromas is the much-quoted “heather sweetness”. The water comes from a lower-lying spring, Cattie Maggie's Quarry.
This Highland Park is copyrighted since 1979 and since then it is the main variety of the distillery.
