Founded in 1798, the Highland Park distillery in Kirkwall on the Orkney Islands is the northernmost distillery in Scotland. Thanks to its special location, in particular the Orkney peat, which differs considerably from Islay peat, the whisky has a distinctive flavour. One of its fundamental aromas is the much-quoted "heather sweetness". The water comes from a lower-lying spring, Cattie Maggie's Quarry.
