Glenallachie 10 Years Spanish Oak Wood Finish - 48%, Single Malt from Speyside, Scotland
Glenallachie 10 Years Spanish Oak Wood Finish - 48%

When it comes to playing with casks and their influence on single malts, Billy Walker is undisputedly a master. With his Virgin Oak Series, the industry legend goes one step further: the whiskies finished in unoccupied oak casks allow discerning fans to explore the taste of oak from all parts of the world, uninfluenced by sherry, wine and the like. For the finishing of The GlenAllachie 10 y.o. – Spanish Oak Wood Finish, casks made of Quercus Robur were used. The oak comes predominantly from the Cantabria Mountains in Spain and gives the Speyside single malt spicy as well as dark sweet notes. Tasting Notes: Nose: Lush orchard fruit, baking spices and sticky toffee pudding, with notes of brown sugar glazed cherries and citrus. This single malt was bottled exclusively for the UK market and is available here only in limited quantities. As with all the single malts in his aromatic Wood Finish range, Billy Walker collaborated with niche producers for this 11-year-old. In Sicily, he unearthed small quantities of exceptional Marsala casks that complement the GlenAllachie character beautifully. At 48% ABV, uncoloured and non-chill-filtered, it is full-bodied and fruity, pleasantly sweet and velvety smooth.

Glenallachie 13 Years Oloroso Wood Finish - 48%, Single Malt from Speyside, Scotland
Glenallachie 13 Years Oloroso Wood Finish - 48%

Studying the influence of casks on single malt whiskey is Billy Walker’s life’s work. The industry veteran addresses the phenomenon in particular in the Wood Finish Series. The series consists of innovative bottlings that the GlenAllachie Master Blender perfects in puncheons, pipes and the like, often from small producers from all over the world. His The GlenAllachie 13 J. – Oloroso Wood Finish was bottled exclusively for the German market. The noble single malt in a rich mahogany tone secured classic vanilla and spice notes in first and second fill barrels made of American white oak. Refined in Oloroso Sherry Puncheons, the dark exclusive bottling spoils the palate with a meaningful, full-bodied flavor profile that underlines the GlenAllachie character with cinnamon and coffee as well as dried and candied fruits. Tasting Notes: Nose: Lush aromas of cinnamon, heather honey and roasted coffee beans, with dried sultanas, mocha and grated coconut. Palate: Hints of syrupy figs and caramel brittle, followed by heather honey, cinnamon and candied ginger.

Glenallachie 2008 DT Octave #3050994 - 55,3%, Single Malt from Speyside, Scotland
Glenallachie 2008 DT Octave #3050994 - 55,3%

Distilled at the Glenallachie distillery in September 2008, this Speyside single malt matured for over 17 years before being finished by independent bottler Duncan Taylor in June 2026. Its distinctive character stems from a final maturation period in a Pedro Ximénez Octave cask; the significantly smaller volume of these casks increases the contact area between wood and spirit, resulting in an exceptionally rich and intense flavor profile. With a strictly limited release of just 87 bottles and a bottling at a natural cask strength of 55.3% ABV, the authenticity of this craftsmanship is preserved. Visually, the whisky impresses with a deep, dark amber hue, achieved entirely without the use of coloring or chill filtration. The bouquet opens with rich aromas of dark dried fruits, underpinned by sweet maltiness, honey, and a delicate pinch of cinnamon. On the palate, a concentrated syrupy note emerges, paired with the structure of spicy oak and vanilla. The finish is remarkably long and dry, characterized by nuances of coffee and licorice alongside elegant tannins.

Glenallachie 2012 Cuvée Wine Cask Finish - 48%, Single Malt from Speyside, Scotland
Glenallachie 2012 Cuvée Wine Cask Finish - 48%

The distillery: back in Scottish private ownership since 2017 Founded in 1967, The GlenAllachie Distillery has long been foreign owned. In 2017, The GlenAllachie Distillers Company bought the distillery in Speyside - together with the filled casks in the warehouse. Its new owners: longtime Scotch whiskey luminary Billy Walker and his partners Trisha Savage and Graham Stevenson. The new team was introduced to their special features by long-standing employees of the distillery. Below: The distillery has four stills and two separate spirit safes - and can therefore produce two different distillates in parallel, for example smoky and non-smoky New Make. The GlenAllachie Distillery has so far produced almost exclusively blended whiskeys. Single malt, on the other hand, was extremely rarely available, for example through independent bottlers. This changed in 2017 with the takeover by Billy Walker's team. Age information for its single malts is important to The GlenAllachie: The core range consists of a 10, 12, 18 and 25 year old whisky. In addition, regular single cask and special bottlings are planned - and from 2018 even a smoky whiskey.

Glenallachie 2012 Cuvée Wine Cask Finish 2023 - 54,9%, Single Malt from Speyside, Scotland
Glenallachie 2012 Cuvée Wine Cask Finish 2023 - 54,9%

Cuvée is French and comes from the world of winemaking. Derived from the word “cuve” for vat or tank, it describes the marriage of different wines bottled under one label. In this way, winemakers combine the characteristics and aromas of particular wine regions or grape varieties into a delicious balance. In wine and whisky making alike, the process calls for great finesse. A job for Billy Walker. Billy Walker has already demonstrated his blending artistry, gained over 50 years of experience, several times in the form of whisky cuvées for Kirsch customers. Now the living legend has selected and combined barrels and barriques for The GlenAllachie Cuvée Cask Finish 2012/2023. The single malt first matured in bourbon barrels. For the finish, Billy Walker used various wine casks, namely Pedro Ximenez puncheons, Moscatel barriques and Ruby Port pipes.

Glenallachie 2015 Sinteis IV - 58.5%, Single Malt from Speyside, Scotland
Glenallachie 2015 Sinteis IV - 58.5%

Have you tried everything yet? With his Sinteis series (named after the Scottish Gaelic word for “synthesis”), Billy Walker invites you to discover untapped potential—specifically, in the fusion of sherry casks with characterful virgin oak casks. The latest release features rare Mongolian oak. Unlike its predecessors, The GlenAllachie 2015/2026 – Sinteis Series Part IV takes a slightly different approach: Instead of blending two separately aged whiskies, Billy Walker first aged the whisky in Pedro Ximénez and Oloroso sherry casks before transferring it to Mongolian virgin oak barrels. These barrels are incredibly rare, as the oak takes over a century to grow, and only trees that have fallen naturally may be harvested. With its dense and fine-grained structure, it imparts delicate notes of light caramel, honey, and floral nuances to the whiskey, which blend with the nutty, dark-fruity, and richly sweet characteristics of the sherry casks.
