The story behind this bottling is closely linked to the name Andrew Symington, who acquired his first cask in 1986 and today is the man behind Signatory Vintage and the Edradour distillery. Distilled in 2018 at the Edradour No. 2 extension, this Highland whisky spent its entire maturation in 1st fill Châteauneuf-du-Pape hogsheads. This choice is a tribute to craftsmanship, as the powerful red wine casks from the Rhône Valley shape the spirit and give it a structure that goes far beyond its young age.
This single malt flows into the glass in a deep amber hue and immediately releases a complex bouquet of ripe cherries, dark berries and a hint of orange, underpinned by floral honey and fine vanilla. On the palate it shows the powerful intensity of 57.1 % vol., with the sweetness of toffee and malty caramel combining with the bitter depth of dark chocolate. A distinctive, spicy pepper note adds tension before the long finish fades out with dry oak spice and an elegant wine structure.
Tasting Notes
Aroma: The nose reveals an interplay of ripe cherries and dark berries, carried by floral honey and a fine note of vanilla. Subtle accents of orange and oak lend the bouquet an elegant complexity.
