Around forty estates from the heart of Bas-Armagnac contribute to the remarkable collection of the House of Darroze. The independent bottlers buy their spirits either via a mobile still, which traditionally makes its rounds after the harvest, or already aged in cask. In the house's own cellars, these often rare casks and brandies from small producers, several generations old, are perfected.

The diversity of crus, vintages, grape varieties and styles in the ageing cellars is the basis for Les Grands Assemblages. Each assemblage combines Armagnacs of different ages that complement each other aromatically. The age of the youngest Armagnac used is indicated on the bottle.

In the limited Borderline range, Darroze demonstrates the maturation expertise gained over 50 years with brandies finished in wine or spirit casks. This approach no longer allows this "Brandy Français" to be bottled as Armagnac, but it reveals new potential in the region. For the Borderline Brandy Français Pinot Noir Finish, five-year-old Armagnac was finished in French red wine casks. They gave it unexpected aromas of kirsch, blackcurrants, toast and smoke.

In the limited Borderline product range, Darroze demonstrates the expertise it has gained over 50 years of ageing using eaux-de-vie that are refined in wine or spirits barrels. Although this procedure no longer allows this ‘Brandy Français’ to be bottled as Armagnac, it does reveal the region’s new potential. This is demonstrated by the Borderline Brandy Français – Chardonnay Finish with a finesse-rich profile in which citrus peel, grapes and peach meet vanilla, caraway and nuts.
