Aberlour
A distillery named Aberlour, founded by Peter Weir and James Gordon, already existed in 1826. The bottles, however, give 1879 as the year the distillery was founded, because in that year it was rebuilt on a new site after a major fire. Aberlour lies right at the foot of Ben Rinnes, which also serves as its water source, and therefore in the heart of Speyside. Since 1974 the distillery has been owned by Pernod Ricard and is run by its Scottish subsidiary Chivas Brothers. In 1973 the distillery was expanded to 4 stills and can now produce up to 3,500,000 litres of pure alcohol a year.
The production process places particular emphasis on local ingredients such as barley and especially soft water. The spirit itself is usually matured for at least 12 years in a combination of hand-selected Oloroso sherry casks and American oak casks. The blenders expect this double maturation to deliver a rich and complex range of aromas. Wine cask finishes are also used frequently. All in all, the result is a style that is not smoky, generally sweet and more fruity than spicy: typical Speyside.
This 10-year-old Aberlour matured in used bourbon and sherry casks. It received its finish in French oak casks, which gave it spicy and soft tones.
