“Fishing is the main source of income for Greenlanders, and halibut is among their most prized catches. We have gently cooked it and sprinkled it with wild-harvested Arctic thyme. This traditional herb of North Atlantic cuisine is called ‘tupaarnaq’ in Greenlandic.” Its aroma harmonizes perfectly with the delicate taste of the halibut.
