In the heart of the Highlands, at the renowned Dalmore Distillery, this single malt was distilled in 2014 before being left to mature for twelve years in the care of independent bottler Signatory Vintage. The whisky owes its particular complexity to its final maturation phase in a 1st fill sherry butt. Choosing this large-volume cask, number 7, allowed for a balanced union of the heavy distillery character and the intense influences of the Spanish wine. Bottled in July 2026 at natural colour and without chill filtration, this malt represents the unadulterated power of a single cask, of which only 678 bottles exist.
The bouquet reveals a dense structure of ripe cherries, carried by fine chocolate and a subtle, elegant sherry sweetness. On the palate the whisky is full-bodied and assertive, dominated by notes of oloroso sherry and dark chocolate, complemented by a striking spicy depth. The finish is long and dry, with hints of roasted coffee and the lingering sherry structure leaving a lasting impression.
