“The roots of rum lie in the 17th century in Central and South America, where sugar cane was cultivated mainly on the Caribbean islands after the introduction of Columbus. Rum is distilled from the fermented mash of sugar cane, sugar cane juice and water and traditionally stored in oak barrels. The tannins present in the wood give the rum a light vanilla flavour, a slightly smoky aroma and a wealth of taste nuances.”

Since 2022, a truly unique spirit has been produced on the ‘Queen of the Hebrides’: Islay Rum. Inspired by traditional Caribbean distillation methods, the Islay Rum Company – the island’s first and, to date, only rum distillery – produces rum varieties rich in esters using a pot still and twin retort still, adopting an experimental approach, working by hand and in small batches. Between Kilnaughton Bay in Port Ellen and Borraichill Hill stands a pot and twin retort still that is unique in the UK. Developed by Head Distiller Ben Inglis, it produces Islay Rum – a smooth, ester-rich spirit that is effectively triple-distilled in a single distillation run. The base for this is molasses and aromatic residues from the previous distillation – essentially ‘Islay dunder’.

The Companero Extra Anejo is a rum from Panama matured for up to 12 years in the so-called solera process. For the first time, refilled bourbon barrels made of American white oak are used for the maturation. The aroma of fresh fruits, honey & caramel, milk chocolate, spices and oranges are very perceptible despite the 54% vol.

Companero is Spanish and stands for buddy or comrade. Rums from Panama are primarily used for the bottlings of Companero rums, but rums from Jamaica or Trinidad are also used to complement them. The sugar cane used for the molasses of the Companero rums is always harvested by hand. Oak wood waters are primarily used for maturation purposes.
