XO Reserve Tribute is crafted from carefully selected, aged molasses-based spirits that have matured in barrels from renowned distilleries in the West Indies and Central America. This blend combines mature barrels with younger components to create a full-bodied, harmonious profile that is both structured and elegant. Slow fermentation enhances complexity, while traditional distillation preserves the subtle layers and nuances.

At the historic ‘Old Lemonade Factory’ in Port Ellen, the traditional Caribbean art of distillation is reinterpreted on Scottish soil. An unusually long fermentation period of 168 hours and the use of a classic copper pot still lay the complex foundations for this spirit. However, it derives its true identity from subsequent ageing in oak casks that previously held heavily peated Islay single malt whisky – a maturation process that forges a deep connection between the rum and its homeland.

In the glass, the rum presents a warm amber hue and immediately unfolds a multi-layered bouquet. Intense notes of smoke and peat blend harmoniously with the classic sweetness of toffee and vanilla, whilst a distinct maritime saltiness is reminiscent of the surf at Port Ellen. On the palate, it is full-bodied with an oily texture, with a subtle peppery spice marking the transition to a long-lasting, smoky-sweet finish.

Since 2022, a truly unique spirit has been produced on the ‘Queen of the Hebrides’: Islay Rum. Inspired by traditional Caribbean distillation methods, the Islay Rum Company – the island’s first and, to date, only rum distillery – produces rum varieties rich in esters using a pot still and twin retort still, adopting an experimental approach, working by hand and in small batches.

Between Kilnaughton Bay in Port Ellen and Borraichill Hill stands a pot and twin retort still that is unique in the UK. Developed by Head Distiller Ben Inglis, it produces Islay Rum – a smooth, ester-rich spirit that is effectively triple-distilled in a single distillation run. The base for this is molasses and aromatic residues from the previous distillation – essentially ‘Islay dunder’.

In the historic surroundings of Port Ellen, this rum is produced at the ‘Old Lemonade Factory’ under the supervision of Distillery Manager Ben Inglis. The production process adheres to an uncompromising artisanal ethos: a 168-hour fermentation using special Prometheus yeast lays the aromatic foundation, before distillation takes place over seven hours in a classic copper pot still with a double retort. The unique selling point of this batch, however, is the finishing process, during which the distillate is smoked over a genuine peat fire – a tribute to the island’s identity.

In the bottle, the spirit presents itself in a warm terracotta hue that already hints at the depth of its aromas. The bouquet is immediately dominated by a distinctive smoky note, which nevertheless leaves room for subtle nuances of cocoa and zesty orange. On the palate, a complex texture unfolds, where the spiciness of ginger and the tart sweetness of cocoa nibs meet the dry, peaty character of Islay peat. It is a captivating interplay between the dark fruitiness of a spiced rum and the powerful character of a smoky island spirit.

When it comes to fine blends, the choice of casks is crucial. Each oak cask brings its own character to the table, whilst also carrying notes of the wines it has previously held – often port or sherry. Over time, this results in layer upon layer of flavours that lend depth, richness and complexity. Old St. Croix XO Reserve – Superior Cask is the most delicate and mature expression of the XO Reserve series. This series comprises extra-aged, double-distilled blends from renowned distilleries in the Caribbean and Central America.

Old St. Croix XO Reserve – 1888 Copenhagen Medal is a modern tribute to the blend for which Albert Heinrich Riise’s family received an award at the Great Nordic Exhibition in Copenhagen in 1888. This blend is based on extra-aged, double-distilled spirits from renowned distilleries in the Caribbean and Central America.

Old St. Croix Black Barrel Navy Spiced was developed in close collaboration between the master blender and experienced bartenders – with one clear goal: to take your cocktails to the next level. This spiced rum blend is based on the same barrels as the Navy series and offers a dark, full-bodied and aromatic flavour profile. As the name suggests, Black Barrel is matured in heavily charred oak barrels. The charred surface reduces the tannins and opens the pores of the wood – for a smoother, rounder and more complex character.

With every sip of this blend, you are helping to preserve a proud piece of Denmark's maritime history – the frigate Jylland. The ship is one of the largest and oldest wooden warships in the world and made five voyages to the Danish West Indies between 1871 and 1887. According to legend, the crew received a daily ration of spirits from Albert Heinrich Riise. By 2025, sales of this blend will have contributed around €23,000 to the restoration of the historic museum ship."
