Islay Rum Company – Barrel Aged – 46%

At the historic ‘Old Lemonade Factory’ in Port Ellen, the traditional Caribbean art of distillation is reinterpreted on Scottish soil. An unusually long fermentation period of 168 hours and the use of a classic copper pot still lay the complex foundations for this spirit. However, it derives its true identity from subsequent ageing in oak casks that previously held heavily peated Islay single malt whisky – a maturation process that forges a deep connection between the rum and its homeland.

In the glass, the rum presents a warm amber hue and immediately unfolds a multi-layered bouquet. Intense notes of smoke and peat blend harmoniously with the classic sweetness of toffee and vanilla, whilst a distinct maritime saltiness is reminiscent of the surf at Port Ellen. On the palate, it is full-bodied with an oily texture, with a subtle peppery spice marking the transition to a long-lasting, smoky-sweet finish.
