The resulting must is distilled and cut before storage with sweet wines d'Alexandria and Pedro Ximénez. These wines give it its sweet character. Carlos I is matured for at least 10 years using the Solera process. The barrels were previously coated with Amontillado Sherry, which gives the brandy additional color and warm and multi-layered aromas.

Taste: The subtle nuttiness and velvety smokiness combine in perfect harmony, accompanied by a pleasantly long-lasting, lush texture.

]]> The distillery, founded by Ian Palmer, began operations almost exactly 10 years ago in December 2015 in Glenrothes (Fife) and takes hi-tech whisky production to the extreme. However, the goal is not, as one might assume, highly efficient mass production, but rather the maximum possible intensification of flavour in the distillates: ‘A Modern Distillery on a Quest for Flavour’.

The production process differs from the classic approach in many areas. For example, there is no mash tun, but a mash filter press (only two distilleries in Scotland use this technology) for higher sugar concentration in the wort. Double condensers behind the stills ensure immense copper contact, and sophisticated wood management contributes to the amazing whiskies.

This is a Speyside whisky from the Glenrothes distillery, which has been matured for 10 years in first-fill Amontillado sherry casks. In keeping with the occasion, 666 bottles have been filled.

]]> Glenrothes was founded by William Grant & Co. In 1878 and is located in the Speyside in the area of Rothes. A fire destroyed warehouse number one and the 2.000 stored casks on the 15th May in 1922. The burning whiksy was flowing down the Burn of Rothes admist through the village.

Cask number 2301847-46 yielded 174 bottles at 53.2% ABV.

Nose: Achy butter, smoky pineapple.
Palate: BBQ apricot, smoked ham, peat.
Finish: Coastal smoke, citrus, sweet ash.

]]> The distillery is located north of Port Askaig on the isle Islay directly at the kyle of Islay. From the distillery you have a wonderful view of the isle Jura. It was built in 1846 and since 1974 it has a completely new stillhouse with six stills. It is owned by Diageo and can be mentioned as a good example for a ‘working house’ that mainly produces for blends for Johnnie Walker.
