]]> Glendronach, the “Valley of the Dronach,” was founded in 1826 by James Allardice on the Dronachburn in the Valley of Forgue, northeast of Huntly in Aberdeenshire, and is thus part of the Highlands region. For a long time, Oloroso sherry casks were used almost exclusively for aging Glendronach, a practice that continues to shape its style today. Along with Glenglassaugh and Benriach, it is owned by the Benriach Distillery Company Ltd.

Although Richard Wagner was a controversial figure, his revolutionary approach had a lasting influence on the world of opera. In honour of his complex harmonies and powerful storytelling, Richard – PX Sherry Cask underwent additional maturation in a single Pedro Ximénez sherry cask.

The Optic barley for the Lowland whisky comes from the farm's southern fields. Distilled in the two copper stills, 20 first-fill bourbon barrels and a Pedro Ximénez-lined sherry cask were then combined to create Daftmill's new eldest. It was bottled at Fife Strength, a traditional strength for the region of 56.3% vol.

]]> At Daftmill Farm, everything actually revolves around the cultivation of malting barley, the rearing of beef cattle, potatoes, carrots and broccoli. Since 2018, however, the farm of the Cuthbert family from Fife in the Scottish Lowlands has been firmly on the whisky world map: after more than 12 years of waiting, Daftmill then brought its first single malt onto the market. The Cuthberts produce their Scotch in very small quantities, sometimes no more than 100 barrels a year, exclusively from their own barley. Distilling takes place in the low season (June and July as well as in winter) when neither potatoes have to be planted nor barley sown.

]]> With Lochlea, the Scottish distillery landscape has recently grown to include an independent, family-run farm distillery. It is not only the former Laphroaig Distillery Manager and current Lochlea Production Director and Master Blender, John Campbell, who is responsible for the distinctive style of their single malt. As one of only four distilleries in Scotland, Lochlea uses only barley from its own cultivation and distils and matures its whisky on site. From the field to the bottle, Lochlea single malt is traceable – in keeping with the distillery’s motto, “Dare to be honest”.

Pre-filled with Pedro Ximénez sherry, ruby port, and Portuguese Moscatel, they worked their barrel magic on the single malt: fruit compote meets milk chocolate, caramelized brown sugar meets ripe blackberries, and a delicate herbal spice meets dark grapes. ]]> The distillery: back in Scottish private ownership since 2017
Founded in 1967, The GlenAllachie Distillery has long been foreign owned. In 2017, The GlenAllachie Distillers Company bought the distillery in Speyside – together with the filled casks in the warehouse. Its new owners: longtime Scotch whiskey luminary Billy Walker and his partners Trisha Savage and Graham Stevenson. The new team was introduced to their special features by long-standing employees of the distillery. Below: The distillery has four stills and two separate spirit safes – and can therefore produce two different distillates in parallel, for example smoky and non-smoky New Make.
The GlenAllachie Distillery has so far produced almost exclusively blended whiskeys. Single malt, on the other hand, was extremely rarely available, for example through independent bottlers. This changed in 2017 with the takeover by Billy Walker’s team. Age information for its single malts is important to The GlenAllachie: The core range consists of a 10, 12, 18 and 25 year old whisky. In addition, regular single cask and special bottlings are planned – and from 2018 even a smoky whiskey.

The Eden Mill Sherry Cask is finished in 50% Oloroso and Pedro Ximénez Sherry Casks from Bodega José y Miguel Martín. Strong natural color and a luxurious flavor profile are the result: sticky toffee pudding, nut brittle, chocolate raisins and cinnamon spice layer after layer ensure the highest level of enjoyment.

]]> Eden Mill is the first producer in Scotland to combine a craft brewery and distillery. They have been producing craft beer again in St Andrews since 2012 and gin and whisky since 2014, after the Haig family last produced whisky here in 1860. Just under 150 years earlier, they were still producing grain whisky with the then Seggie Distillery.

The symbiosis of brewery and distillery produces aromatic beers with a strong character, which in their unhopped state form the basis for their whiskies. A considerable amount of aromas are brought into the later whisky by the Pale, Chocolate and Crystal Malt varieties, thus creating unique products. There is still a lot of experimentation and questioning going on here and thus the product range and quality are constantly being brought forward. Everything is produced by hand and harvested from local fields.

Eden Mill’s gin also benefits excellently from this symbiosis. The usual addition of botanicals to the neutral alcohol used in gin enjoys not only juniper but also unusual ingredients such as hops or coarse matured pieces of oak. The range of gins reinvents the category and reflects the courage to innovate here too. Currently, in addition to a more classic gin (Original Gin), Eden Mill also produces three other gins: the Love, Oak and Hop Gins.

All gins are small-batch approaches and of high quality, yet Eden Mill Distillery is able to offer its gins at excellent prices.

Both matured in a barrel pre-filled with the sweet Pedro Ximénez sherry. Fully peated whiskey has only been known from Bimber since spring 2023. The distillers bring peat from Aberdeenshire to London and kiln the barley malt themselves in a custom-made drying oven. The smoky-fruity Bimber Pedo Ximénez Sherry Cask #458 is the result of these high standards of craftsmanship.
