Mortlach Distillery is renowned among connoisseurs for its robust, almost meaty character. Murray McDavid initially allowed this spirit—distilled in 2008—to mature in ex-bourbon hogsheads before transferring it to a Pedro Ximénez barrique from the esteemed Bodegas Ximénez-Spinola for the crucial finishing stage. This four-year maturation in staves deeply imbued with sherry imparts a complexity to the whisky that can only be achieved through artisanal precision and the "art of maturation."

On the nose, a complex bouquet unfolds with notes of baked apple, dried apricot, and the waxy character typical of Mortlach. On the palate, the malt reveals a generous side, featuring notes of soft toffee, ripe peach, and a rich, almost chewy malty body. The finish is reminiscent of freshly baked brioche and stroopwafel, underpinned by a warming, buttery spice that lingers, echoing the deep mahogany hue in the glass.

The distillery whose name means as much as ‘great barrier’ is located next to the shore of Loch Indaal in the center of the isle Islay. Founded in 1779 it is one of the oldest distilleries in Sotland, owned by the japanese Suntory Group. The water comes from the River Laggan.

Mortlach is th oldest distillery in Dufftown, which is the centre of the Speyside. It was founded in 1823 at the riverside of the Dullon. The whisky is produced in a special way, passing six different spirit stills.

The history of Cardhu, which means as much as ‘black rock’ started in 1824 and is nowadays located in Upperknockando by Aberlour. It is one of the most important brands of the concern Diageo and one of the most important parts of the blends of Johnnie Walker as well.

The distillery, with a name that means as much as ‘mountainside’ or ‘garden on the slope’, is located some miles north of Dunrobin Castle near to the village Brora and therefore belongs to the northern Highlands. It was built in 1967 next to another distillery. Since both distilleries produced under the same name for a period of time the other one changed its name to ‘Brora’. The water Clynelish uses comes from the Clynemilton Burn.

Dalmunach is a relatively young Speyside distillery in Carron, located on the former Imperial distillery site and part of the Pernod Ricard group. It is likely that much of the production will be used for Chivas Regal blending and that single malts from Dalmunach will tend to be rarer.
