The distillate spent its entire maturation period in the cool, damp Dunnage Warehouses of the Grant family, deeply rooted in Speyside. At the heart of this bottling is the first-fill sherry butt numbered 5191, which imparted its complex character to the spirit over the course of twelve years before it was finished in August 2026.

In the glass, this single malt displays a magnificent, natural mahogany color. The bouquet is characterized by an intense sherry depth, underpinned by ripe dried fruits and a malty underlying sweetness. On the palate, the full strength of 64.4% ABV unfolds, with notes of dark berries and toasted oak meeting a delicate caramel texture. The finish is remarkably long, leaving behind a characteristic Demerara sweetness as well as elegant, spicy wood notes.

Glenfarclas, which means “Valley of the Green Grasslands,” was founded in 1836 by Robert Hay and purchased in 1865 by John Grant. To this day, it remains in the hands of the Grant family, who, with great foresight and consistency, continually offer outstanding single casks and special editions in addition to their standard bottlings. So it’s no coincidence that we’ve already had the privilege of personally selecting several Glenfarclas casks and bottling them under our own name. Since 2006, the tastings in Itzehoe featuring family member George Grant have been among our highlights. The Oloroso sherry casks, which are primarily used, give Glenfarclas its very special aromas, prized by whiskey connoisseurs around the world.

The family brings out standard bottlings as well as outstanding special bottlings with foresight and continuity. We had the great chance to choose several casks personally and do our own bottlings. Since 2006 George Grants visits in Itzehoe are one of our highlights we experienced. The mainly used Oloroso Sherry Casks give the whisky its character, that is pretty special and appreciated by whisky experts in the whole world.

Signatory Vintage is now supporting the marine conservationists again with a special bottling, some of the proceeds of which go directly to Sea Shepherd. And because nothing is more appropriate than a single malt whose rough, maritime notes reflect the character of the environmental pirates, the choice fell on the Bunnahabhain 2012/2024.

The eleven-year-old Islay whisky matured entirely in a single first fill sherry butt. 850 bottles are ready to help Sea Shepherd defend the oceans.

]]> The Bunnahabhain distillery is located at the kyle of Islay at the edge of the island in the northeast and lays that isolated, that there had to be constructed a long and curvy street down to the sea as it was built in 1881.The water that is used has its origin in an underground spring from the river Margadale and therefore it comes from Islay it has a relatively low concentration of peat. Until 2003 it was owned by an descendant of the founder, Highland Distillers. Nowadays it is owned by Burn Stewart Distillers.

]]> The Craigellachie is located in the Speyside. It was founded by Peter Mackie and others and built in 1891. In 1964 the distillery was extended to owning four stills. Nowadays the distillery is owned by Bacardi Martini. The water that is used came from the Hill of Little Conval, but today it comes from the Blue Hill.

Tom Thiel, whose art is immortalized on the CD covers of the melodic death metal band “Amon Amarth” and the Vikings series, among others, gives the mystical, delicately smoky single malt the appropriate label.

After 10 years in a first fill sherry butt and two second fill Bordeaux hogsheads, he fills 1,285 bottles - exclusively for the German market.

]]> Founded in 1798, the Highland Park distillery in Kirkwall on the Orkney Islands is the northernmost distillery in Scotland. Due to its special location, especially the peat in Orkney, which differs significantly from the Islay peat, the whisky has a special taste. One of its basic flavours is the much-cited “heather sweetness”. The water comes from a lower spring, Cattie Maggie’s Quarry.
