Unlike Scotch whisky, Irish whiskey is distilled three times. This makes the distillate purer and lighter. The pot stills used are considerably larger than in Scotland. The mash for Irish Whiskey consists of unmalted barley to which a small amount of barley malt is added - the result is called \"Pure Pot Still\". After a very eventful history and the decline of the Irish whiskey industry, there have been a number of new projects and distilleries in Ireland for several years.
