According to the French synonym for aperitif, this is an old cider that has been chaptalised and fermented with sherry yeasts. After clarification, it matures for at least six months in red wine barrels (barrique). Its sweet and sour note with a slightly oxidative sherry flavour is excellent pure as a welcome drink or as an accompaniment to cheese and desserts.
