Our distillery in the heart of Bristol is recognised as ‘Britain’s most innovative distillery’ (- Master of Malt). Our highly motivated team works long and hard to get as much great flavour as possible into their spirits. To achieve this, we apply our ‘flavour first’ approach. This means that flavour comes first in all decisions at the distillery. Part of our ‘flavour first’ approach is the principle of flavour layering. To create these layers of flavour, we use multi-grain mashes, brewer’s yeasts and very long open fermentations. The barrels add the final layers of flavour. This approach has led to some unexpected results, the most important of which is that we are not making a single malt…
