IRELAND
Whiskey making in Ireland has a tradition going back centuries. Unlike Scotch whisky, Irish whiskey is distilled three times. This makes the distillate purer and lighter. The pot stills used are considerably larger than in Scotland. The mash for Irish Whiskey consists of unmalted barley to which a small amount of barley malt is added – the result is called “Pure Pot Still”. After a very eventful history and the decline of the Irish whiskey industry, there have been a number of new projects and distilleries in Ireland for several years. One of the best-known projects is the Waterford Distillery, which was founded by whiskey icon Mark Reynier and places great value on the terroir of the barley used, working together with a large number of different farms.
