A peculiar explosive herbal spirit with character.

Kümmel, or Köm, is a traditional North German schnapps. It is drunk well chilled or hot in tea punch.

The single cask bottling, limited to 90 bottles, initially matured in traditional French oak casks prefilled with Calvados. For the refinement, Guillaume Drouin, who runs the house today, remembered a tradition that his grandfather established and used port wine and sherry casks. The Calvados spent 21 months in port casks and another 20 months in casks that previously contained sherry. The result: a taste experience that is as traditional as it is original, with intense fruit and elegant spice. Tasting Notes: Nose: Black currants and cider in combination with oily balsamic and oak. Palate: Chocolate combines with grape must, apple cider and dark fruits. There are also notes of tar and ship's diesel as well as old oak wood, furniture polish, tobacco, leather and mineral notes. Aftertaste: With a very powerful finale, the Calvados spoils the palates of experienced connoisseurs for a long time to come.

The Calvados 1992/2022 matured in a traditional French Calvados oak barrel for a full 30 years. The single cask is the final of the 2022 trilogy of bottlings, tasted and selected on site in the house cellars - exclusively for Kirsch Import customers. The single cask bottling, limited to 90 bottles, is a particularly straightforward, classic and incredibly self-confident Calvados. At an intense 48.2% vol. it shows a very exciting interplay of aromas from fresh green apples to honey sweetness and minerality to intense spice. Tasting Notes: Nose: Fresh green apple with overripe pear and orange peel as well as mineral limestone and soft honey sweetness. Palate: Very appley, with pronounced minerality, subtle oak and lots of spice. Aftertaste: Long, with lasting freshness.

Only the juice from the first pressing of the apples is used to make the cider for these calvados. After the cider has fermented, it is allowed to mature in oak barrels for several months. Then it is distilled twice and matured for 4 years in oak barrels.
