Monterey Jack

Late in the century before last, David Jacks made this cheese, made according to the Franciscan tradition with excellent melting properties. The cheeseburger was invented for this cheese. The Monterey Jack is mild and leaves the other burger building blocks their character.

Ingredients: Mustard seeds, caraway, anise, cumin, white pepper, dill seeds, chillies with seeds, rosemary.
