The visionary endeavour of the 100% Islay philosophy finds expression in this unique single cask collection. Supported by the centuries-old tradition of farm distilling, the infinite possibilities of on-site craft processes and outstanding cask management, Kilchoman’s artful wealth of variations is on display. Different cask types, vintages and smoke levels are presented in Cask Strength. Each of the casks is numbered I-X for the release, each bottle individually numbered and accompanied by a short Distiller’s Tasting Note.
This Kilchoman is a bottling with a Sauternes cask finish, peated at 50ppm.
Original Tasting Notes: The Sauternes finish adds layers of honied fruits, butterscotch and burnt sugars, combining beatifully with Kilchoman peat smoke.

The distillery was opened by Anthony Wills in 2005. It was the first new-opening of a distillery on Islay after a pause of 125 years. It is located in the northwestern part of the island on a former farmer area and is the only distillery on Islay that isn’t located next to the sea. It also is the only distillery on Islay which may call itself ‘100% Islay’, using all the ingredients and doing every producing step on the island.
