In the warm southwest of Japan, the East China Sea meets the Fukiagehama. One of the country’s most beautiful sandy beaches stretches for around 50 kilometres along the coast of Kagoshima Prefecture, which is also home to the Tsunuki Mars Distillery. Since 2017, there has been a new vantage point on the white dunes of Fukiagehama: the Kanosuke Distillery.
Kanosuke is young – but part of a much older spirits story. The distillery belongs to Komasa Jyozo and is named after the second-generation Master Distiller. Founded in 1883, the parent company pioneered a unique, slow-aged version of the traditional Japanese spirit shochu. This “Mellowed Kozuru” is celebrated for its smooth character throughout Japan. With Kanosuke, the pioneers expand their skills to include first-class Japanese whisky.
The distillery’s location is ideal for whisky production. Tending towards mild summers with a maximum of 35°C and wild, windy winters in which the temperature can drop to -4°C ensure that the distillates mature quickly. Critics worldwide agree: even after a short time, the bottlings taste many times riper than their age would suggest.
The region is also blessed with crystal-clear groundwater, which is filtered and clarified on its way across the Shirasu plateau.
Also advantageous: Kanosuke works with three individual pot stills. The Japanese-made copper stills each differ in the shape of the neck and the angle of the lyne arm. Whether by redistilling in different stills or blending distillates from the pot still trio, Kanosuke is thus able to create whiskies with great depth and distinctively smooth textures.
The single malts are built on barley malt from the UK, Europe, Australia and Japan. The ratio of peated to unpeated malt is 85:15 (Kanosuke has also been producing grain whisky for future blended Japanese whisky since 2010). Fermentation takes place for 96 hours with distiller’s and ale yeast.
For cask maturation, Kanosuke concentrates on American white oak casks that have been burnt out again and in which “Mellowed Kozuru” was previously stored.
The distillery also has classic bourbon casks, sherry and wine casks, barrels pre-aged with IPA or those made of Mizunara oak.
