More than 3,600 supporters made the GlenWyvis Distillery project possible. Founded in 2015 in the Scottish Highlands near Inverness, the whisky distillery is entirely community-owned. A record-breaking crowdfunding campaign funded the £3.8 million project, reviving the distilling tradition of Dingwall after 90 years.
Nestled between the foothills of Ben Wyvis, GlenWyvis brings together renewable energy (the distillery is completely independent of the electricity grid) with local barley, long fermentation and traditional copper stills. The result is a robust single malt, fragrant and fruity. The small distillery released its first whisky at the end of 2021.

GlenWyvis uses only local Concerto barley for their Highland Single Malt Scotch Whisky. The regional mash ferments for around 96 hours before it is distilled in the squat 2,500 liter wash still and the 1,700 liter spirit still. An uncompromising heart cut was filled into 23 casks for the 2022 release: first fill Tennessee whiskey casks give it a complex sweetness, Oloroso hogsheads contribute lush fruit notes and refill Scotch whiskey hogsheads underline the fragrant, spicy character of the new make.
Tasting Notes:
Nose: Soft white grapes that fade into a jammy sweetness.
Palate: Custard, sherbet powder and Pear Drops candy.
Finish: Initial dark chocolate with lingering summer berries.
