The distillery was founded 2003 by the three friends Denis McCarthy, Ger McCarthy und John O’Connell and is located in the west of Ireland, near Cork. For the whiskys they use only fresh spring water from the Ilen River. The barley comes from Ireland and is malted by hand.

Each bottle is numbered and can be traced back to each individual cask and even the tree it came from.
140 year old trees from the ancient oak forests in the mountains surrounding the distillery have been sustainably felled. This was the start of a year-long process that culminates in a cask made from Irish oak.
These special casks are filled with the most typical of all Irish whiskeys – the pot still. The higher proportion of toasted oak and vanilla flavours that the Irish oak brings to the liquid complements and balances the classic pot still spices.
