]]> Koval is Yiddish and means “black sheep” – or that someone does something extraordinary. Like the founders of the Koval Distillery. In 2008 Robert and Sonat Birnecker gave up their academic careers. The distillery expert as well as the lecturer in distillation and the history professor swapped books for stills in order to continue the distilling tradition in Chicago that Robert had learned from his Austrian grandfather. Today Koval is the largest independent craft distillery in the USA.

Koval makes innovative whiskeys from sustainably grown, mainly unmalted organic grain (often unconventional varieties) from the region. According to the “grain-to-bottle principle”, the distillers control the entire supply chain and carry out every distillation step themselves.

And who better to choose a barrel for you than the internal sales manager, Patrick Ahluwalia? The gourmet's enthusiastic choice fell on a Virgin American Oak Cask, burnt out at Level 2 for plenty of interaction with the white oak. Understandable: with a massive 62.5% vol. Cask Strength shows the single malt multi-layered notes that span the spectrum from orange blossom honey to black tea and liquorice to malt.

Tasting Notes:

Nose: Sweet and full of orange blossom honey. There are also beeswax and a sweet black tea as well as cereals and malt candies, which provide cereal-like sweetness.

Palate: Spicy! Ginger paired with brewed black tea. Kumquats and molasses create a harmonious, bittersweet note, which is accompanied by the sweetness of licorice bats.

Finish: Medium length with woody tones and Earl Gray tea in the aftertaste. Honey and malt remain on the palate.

About time, one asks Westward. The Craft Distillery is one of the founding members of the American Single Malt Whiskey Commission. Founded in 2016 by 16 distilleries, the association is working on establishing legal standards for the US category of single malts in line with Scotland, among others.

100 percent barley malt, distilled in a single distillery in the United States to no more than 80% vol., Matured in oak barrels with a maximum capacity of 700 liters and bottled with at least 40% vol. – A matter of course for the Westward Distillery, which works according to the “Grain to Glass” principle. This is also obvious because the whiskey distillery founded in 2004 by master distiller Christian Krogstad is home to the main growing area for barley in the USA.

Westward Single Malt embodies the Pacific Northwest. Defocused by the states of Oregon, Washington and Idaho, the region is probably one of the most beautiful in the USA. And it not only attracts with snow-capped mountain peaks, raging streams, lush forests or wildly romantic coastlines: Portland is also the heart of the American craft beer scene. This is how Westward starts single malt as a beer. More precisely as a flavor-intensive pale ale, brewed in the distillery from regional barley malt, fermented with ale yeast.

The aroma evokes childhood memories of fresh waffles and chocolate pudding. On the palate, fruity notes of cherries and bananas emerge, rounded off with flavours of chocolate, almonds and Turkish coffee.
