The X.O Grande Champagne Cognac, for example, testifies to the skill of the Pasquet house. For this age rating, cognac must mature for at least ten years. This X.O is a full 25 years old – including even older components. Because son Jean, who runs the business today with his wife Amy, married in the assemblage, the blend, barrels of the vintages 1992, 1994, 1995 and 1996. The result: an incredibly round, complex cognac with the flavor of leather and tobacco with notes of dark chocolate and the intense fruity sweetness of grapes that extends into the long finish.
