The first legal whiskey distillery on the Hebridean island of Raasay is opening a powerful new chapter: With the Isle of Raasay Cask Strength Release 2024, the coastal distillery presents its strongest single malt to date.

For the limited special bottling, the classic Isle of Raasay Single Malt with a cask strength of 61.3% vol. bottled. It was made according to the island distillers' innovative cask recipe from peated and unpeated raw spirits, which mature separately on Raasay's coast in three cask types: First Fill Rye Whiskey Casks, Virgin Chinkapin Oak Casks and First Fill Bordeaux Red Wine Casks.

The result? A maximum of taste in which delicate, aromatic smoke meets lush fruit notes of cherry, apricot and black currant. Candied ginger, black pepper and cinnamon, vanilla, butterscotch, sandalwood and a touch of salt round off the complex experience.

In May 2017, Bill Dobbie and Alasdair Day brought barley growing back to Raasay after more than 40 years. Since then, the old Icelandic barley varieties Bere and Iskria have flourished here. This was not yet enough as a basis for the distillery’s pioneer malt. Malt from Scottish barley, still kilned over Highland peat (local peat is already being planned for further bottlings), forms the basis for the Isle of Raasay Single Malt Inaugural Release 2020. Slightly smoky, with rich aromas of dark fruits and in a natural, strong reddish brown, the Scotch sensually introduces the distilling style of the Raasay Distillery – and creates anticipation for the Core Range expected in May 2021. Other special features of the whisky: the Raasay water filtered through volcanic sedimentary rock and the unusually long fermentation of 96 to 110 hours. This maintains the high mineral content of the water and thus ensures the characteristic berry-fruity taste even before any barrel contact.

Israel’s 300 days of sunshine in an average year and the Mediterranean climate are formative for the whiskies of the Mild & Honey distillery. Maturing in a warm climate means that the whisky matures quickly, yet with great grace. Whisky made in warmer climates takes on a specific terroir that produces unique flavours that are somewhat different from those of the Old World. The methods, technique and equipment are based on centuries-old knowledge, and the distillery adheres to the tradition of maturing for at least three years.
