Savanna “Metis” – 40%

On the shores of the Indian Ocean, at the foot of the Piton de la Fournaise volcano, the Savanna distillery is at home. Rum has been produced by hand here in the French overseas department and sugar cane paradise of La Réunion since the 19th century. However, the distillery and its exquisite bottlings as we know them today go back to Émile Hugot. Internationally known as “Monsieur Sucre”, he led Savanna into the future from the 1950s onwards with extensive expertise in the field of sugar.

At the heart of Savanna is high quality Rhum Agricole, Rhum traditionnel and Grand Arôme Rum, which the distillery is one of the few in the world to produce. The full-bodied molasses rum ferments extensively and develops a high ester content, similar to typical Jamaican rums. Unusually for distilleries in the French overseas departments, Savanna processes both fresh sugar cane juice and molasses in column and pot still – and only between July and November.

Free of any additives and not chill-filtered, Savanna rums reveal multi-faceted, authentic flavours that bear witness to the wild beauty of the island.

Tobermory 1995 Murray McDavid WDC – 52,4%

This special cask from the Tobermory distillery was first matured on Islay under the watchful eye of Jim McEwan. It was he who had the whisky filled into a French oak cask. In 2013, the cask was then taken to the Dunnage Warehouses in Speyside. There it was finally discovered by Wu DRAM Clan and selected for bottling.

Jean-Luc Pasquet L.40Y Confluences – 48,8%

Discerning connoisseurs associate the name Pasquet not only with the finest certified organic cognac, but also with exquisite vintage bottlings. The limited-edition creations in the Confluences range are a combination of exquisite snapshots from the second-generation-run house, which together form an even greater whole.

Symphonie des Terroirs No. 2 is a multi-cru blend from three barrels, each from different terroirs: Grande Champagne L.57/62 (15%), Fins Bois L.81 (50%) and Borderies L.90s (35%). Balanced between the freshness of the Borderies, the roundness of the Fins Bois and the length of the Grande Champagne, the cognac expresses the character of each cru.

With the single casks in the Journal des Kirsch series, we report on the experiences that French spirits have to offer: Excitement, surprise, great pleasure and variety. The latter is particularly true of the seventh edition: the innovative Jean-Luc Pasquet L81.

A cognac traditionally produced by the Jean-Luc Pasquet family business from Fins Bois grapes, this treasure of a spirit was transferred to a freshly emptied C<>H Hampden cask after maturing for over 40 years in French oak. The result? An unprecedented dynamic between ester and rancio notes that reaches a new level of flavour.

In return, the experimental Eau de Vie de Vin is happy to renounce its legal status as a cognac. This is reserved for brandies from the region, which are matured in French Limousin and Tronçais oak barrels or barrels pre-aged with grape products such as wine, sherry or port.

This remarkable single cask was bottled at natural cask strength and without additives in 318 bottles. At a high 52.5% vol., the interplay of French oak and Hampden cask comes into its own. Classic Rancio notes are complemented for the first time by ester notes characteristic of the Jamaican rum icon, which lend fruity and tropical accents.

Renegade Rum Cuvée Nova – 46%

Mark Reynier has become the mouthpiece for terroir whiskies – single malts with the flavour of their origin – especially since the start of his Waterford Distillery. He has transferred his search for the quintessence of individual terroirs and the ultimate whole that they produce together to the rum category. A year ago, the first distillate flowed from the stills of the Renegade Rum Distillery on the tiny Caribbean island of Grenada. Largely run by Grenada residents, Reynier had been planning the innovative distillery since 2015, and now the longed-for first Renegade Rums are here.

Farm by farm, field by field, terroir by terroir, the Single Farm Origin Rums Grenada represent in terms of taste – and in a 100% traceable transparent way. Renegade presses fresh sugar cane juice from six sugar cane varieties from 45 different terroirs. In addition to a column still, a pot still with double retort still is available for diverse distillation – and barrels made of French, American and exotic oak for diverse maturation.

Vallein Tercinier Lot 71 Petite Champagne for Flickenschild – 54,1%

With this Vallein Tercinier Lot 71 Petite Champagne, we are launching our fifth in-house cognac bottling in collaboration with Sebastian Jaeger from the Wu Dram Clan. On the nose, the cognac impresses with intense floral aromas and slightly earthy notes. These are mainly characterized by orange peel with a little vanilla, dried plums, peach and a hint of cocoa. On the palate, the lush and ripe fruits, reminiscent of a fruit jam, immediately dominate. These are accompanied by notes of caramel and chocolate. The finish is mouth-filling and lingering.

The Maxime Trijol 1972 leads into the eye of a tropical storm: incomparable notes of mango and passion fruit coat the palate with a mouth-filling, waxy consistency. A profile that was not to be expected from the small plot in Petite Champagne. The renowned house Trijol has been guarding the cognac jewel since 1972. Half a century later, it was bottled in late summer 2023 - cask strength, without additives and not chill-filtered for full, top-class enjoyment.

Darroze – Les Grands Assemblages 40 – 43%

Francis Darroze and his son Marc roam the Gascony countryside in search of treasure. The objects of their search? Special Armagnacs. Around forty estates from the heart of the Bas-Armagnac region contribute to the Darroze’s exceptional collection. The independent bottlers purchase their distillates either using a mobile distiller, which traditionally makes its rounds after the harvest, or already stored in barrels. These often rare, multi-generational barrels or eaux-de-vie from small producers are perfected in the house’s own cellars.
